Forloren Hare

It is always lovely to arrive at the house and whilst unpacking and lighting the stove, our neighbours welcome us witDanish meal. Forloren Hare is a meat loaf which looks like a forlorn hare, which we see many of whilst out running and cycling but is made from minced beef, pork and slices of lardon. The sauce is made from a burnt butter and the meal we were served with pickled red cabbage and potatoes.

The tradition of mock hare and mock turtles in England came about partly when there were the utensils to mince left over meat in domestic homes and so the rich could mimic the flavour of the turtle using a calves head and oysters to give the richness of flavour.
