Very excitingly, we have two coffees from the same producer, and of the same variety, the only difference being the processing. This is such a great opportunity to try both of the coffees, side by side, and isolate how the processing of these coffees impacts the flavour experience.

PROLOG have been working now with Jose and his team at El Paraiso in the Nariño region of Colombia for four years. One of our many long-term partnerships, they value building a connection that promotes stability and quality for everyone involved. 

 The first release this week is El Paraiso Washed. Jose’s washed Caturra varietal gives us such a clean cup of coffee. Very easy drinking and juicy, with a complex, multi-layered acidity. Such a great example of how great washed Colombian coffees can be! We experience flavours of nectarine, apple, sugar cane.

 And to complement perfectly this first release, we also have El Paraiso Natural. The team at El Paraiso are so well experienced at using natural processing to enhance aroma and sweetness without compromising the quality and cleanliness of the coffee. The result is a very approachable funky coffee with incredible sweet and aromatic characteristics. In the cup, we experience candy-like flavours of raspberry and vanilla.

The symbols indicate different styles of coffees.

Life of a bee, what a generous insect. Collecting nectar and pollen and producing wax and honey. That is round and sweet.

Blackcurrant, lime, apple, melon, name any fruit - they all come from the flower. These coffees are fruity but no wonder if they have kept their floral touch.

Cosmos represents a funky style with distance fermentations

The rainbow is unusual and unique - wild and crazy. So are the coffees.
