A cold bowl - koldskål
Buttermilk based summer pudding on perhaps our last day of summer heat, whether the addition of strawberries, black and redcurrants or now blackberries, the koldskål makes an easy summer pudding. I have a BrdrPrice recipe here:
11.5 dL egg yolk, 175g sugar cane, 11.5 dL cream, 3 dL creme fraiche, 11.5 dL buttermilk, seeds from one vanilla pod, juice of half a lemon. Stir until sugar dissolved, add other ingredients and chill for a couple of hours.
